Rhubarb Cake

Spring is here, and that means rhubarb will soon be in season. This is an excellent rhubarb recipe, reminiscent of a moist apple cake. Enjoy!

350 degrees F. for about 35 minutes.
Cream: 1 1/2 cups sugar
  1 stick butter
Add: 1 cup sour cream or yogurt
  1 egg
  1 tsp vanilla
  2 cups flour
  1 tsp baking soda
  Optional: 1/2 cup of nuts
Add: 2 cups diced rhubarb
Mix, then: Pour into 9" x 13" pan, then sprinkle the following topping on it before placing in the oven.
Topping:
Mix: 1/4 cup sugar
  1/2 tsp. cinnamon
Mix the sugar and cinnamon together and sprinkle over the top of the batter. Bake at 350 degree F. over for about 35 min.
 
Hi, I'm Emma, and I rule the roost here, so to speak, at Crow Hill. That's me with my favorite bunny. I am just a year old, talk a lot, but mostly I like saying, "I'm a pretty bird", and "I'm a good bird." Alicia and Sharon are always telling visitors to "watch what you say". Guess they are afraid what I might say. Little do they know!

My favorite pastime is sitting in Sharon's upstairs studio and getting as much attention as possible. If I squawk enough, she will bring me downstairs to my perch in the corner of the kitchen where I can watch the birds at the outside feeder....and listen to family conversation while Sharon and Alicia dye the wool.

The latest news is that with the help of Chuck, finish carpenter extraordinaire, and husband and father of Sharon and Alicia, the new studio is done!! Sharon and Alicia have filled it with gorgeous hand dyed wools, patterns, and finished rugs. It is so warm and inviting. I am hoping that they have a perch in there for me.

They are forming beginner rug hooking classes. They are great teachers and very caring. You can ask them anything and they will help you!

Their unique ability to hook subtle variations into a primitive rug is awe-inspiring. I think it is the richness of the hand dyed wools, combined with their artistic skill at hooking that gives a depth to the finished rugs.

They are extremely creative and talented designers, and have always done exemplary work. I am in heaven in this studio being surrounded by rugs done, rugs half done, quilts, quilts half done, and books on every subject!
